    Stammende fra en lille parcel med meget gamle mere end 120 år gamle stokke i den højtliggende Finca Manoni i El Peral i Tupungato, er dette en sindsoprivende hvidvin! Gæret i foudre flyttes vinen først efter knap et år til brugte 500 liters fade, hvor den lagres yderligere et år uden at blive toppet op. Der dannes derfor et lag af ”flor” som man kender det fra især Jura. Vinen viser en aldeles brillant næse, som sender minder til både Bourgogne og Jura med sine toner af nødder, urter, mentol, cement, mirabelle, blomster, citrus, ostevalle og våde sten. Smagen er sensationel. Den er tør, koncentreret og superkompleks i frugten med nøddenuancer, intens tørhed og sublim balancerende syrerygrad i et udtryk, der er i perfekt, kompromisløs harmoni. Dybden er enestående, og den slutter med intense salte toner i en bragende og magtfuld finale med intens stenethed. Det er fuldstændig vildt og en helt enestående vin. En absolut modpol til al den simple hvidvin, der udgør 99,9999% af verdens produktion og en af de mest karakterstærke hvidvine, vi nogensinde har præsenteret – og smager den endda fantastisk samtidig.     98 points Tim Atkin: ”Well, what can I say? For the second year running, this stunning wine has emerged as the best white wine in my report. Made with old-vine Semillón from a sandy, alluvial site in El Peral, it was fermented on its skins and aged under a veil of naturally occurring flor. Layered, tannic, complex, refreshing, saline, bready and stony, with struck match undertones and a finish that lingers enticingly on the palate. Sadly, there are only 1,200 bottles.”

    96 points Robert Parker Wine Advocate: ”The white 2018 Certezas is pure Sémillon from a subplot of older vines on very poor soils within the 10 hectares of an old dry-farmed vineyard, the Finca Manoni in El Peral (Tupungato). This is the white signed by Manu Michelini, the son of Gerardo and Andrea, from one of the few dry-farmed vineyards in the zone. It was macerated with the skins for three days and then pressed and fermented in 1,000-liter oak foudre, where the wine matures with the lees until the following vintage comes; then the wine is transferred to 500-liter barrel where it completes the élevage for two years (almost three winters). There are some yeasty and smoky aromas, and it's spicy (until 2018 they were in an old winery, and the air yeasts created some flor), reminding me of some white Burgundies. It was a year of light, and the grapes developed good flavors and aromas. The wine has bones, but it also has meat; it's juicy and round, with amazing structure. This is really superb and should age nicely. 1,500 bottles were filled in June 2020.”
